You know how we love our snacks here at Spring44. Homemade snacks and cocktails create the perfect happy hour for friends and family. Below is our favorite baba ghanoush recipe. Enjoy.
2 large eggplants
2 garlic cloves, minced
1/4 cup tahini
1/4 cup tablespoon lemon juice
1 teaspoon salt
liquid smoke or smoked paprika (optional)
Cut the eggplants in half lengthwise and place flesh side down on parchment. Roast in the oven at 450 degrees until very tender (about 45 mins).
Let cool, scoop out flesh and put in colander to drain excess liquid.
Mash in bowl and add the rest of the ingredients. Combine well and adjust to taste. Top with parsley, olive oil and pomegranate syrup. Enjoy with bread or crackers!
Rosewater Gin Lemonade:
3 oz Spring44 Gin
1/4 cup lemon juice
1 lemon zested
1.5 tbsp sugar or honey
1/2 tsp rose water
Combine all ingredients and stir well to dissolve sugar or honey. Split lemonade between two glasses, add ice and top with lemon mineral water or bitter lemon soda. Add mint, basil or lemon wheels to garnish.
